A delightful combination of creamy feta cheese and fluffy potatoes, baked to perfection for a comforting dish.

Ingredients

  • 2 pounds waxy potatoes (Yukon Gold or red)
  • 8 ounces feta cheese, crumbled
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (thyme or parsley) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and cut the potatoes into uniform pieces.
  3. Arrange them in a baking dish.
  4. Sprinkle the crumbled feta over the potatoes.
  5. Drizzle with olive oil and season with salt, pepper, and herbs.
