This moist and aromatic banana bread made with oil is perfect for breakfast or a sweet snack.

Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup vegetable oil
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mix together the oil, sugar, and mashed bananas until smooth.
  3. Combine the dry ingredients gradually into the wet mixture, being careful not to over-mix.
  4. Pour the batter into the prepared loaf pan.
  5. Bake for about 60 minutes, or until the top is golden and a toothpick comes out clean.
  6. Cool the bread for a few minutes before slicing.

Notes

For a lighter version, substitute oil with unsweetened applesauce. Experiment with adding nuts or chocolate chips!
