A vibrant pasta salad with crisp vegetables and a light, zesty dressing, perfect for picnics and casual dinners.

Ingredients

  • 2 cups pasta (rotini or penne)
  • 1 cup bell peppers, diced
  • 1 cup cucumbers, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup olive oil
  • 2 tablespoons vinegar (red wine or balsamic)
  • 1 teaspoon dried herbs (oregano or basil)
  • Salt and pepper to taste
  • 1/2 cup cheese (feta or mozzarella, optional)
  • 1 cup grilled chicken or chickpeas (optional)

Instructions

  1. Boil a pot of water and cook the pasta according to the package instructions until al dente.
  2. Drain and rinse it under cold water to halt the cooking process.
  3. Toss the diced vegetables, cooked pasta, and dressing in a large mixing bowl until well-coated.
  4. Let it sit for a bit to allow the flavors to blend.
  5. Serve chilled or at room temperature, garnished with fresh herbs if desired.
