A vibrant and refreshing salad with charred corn, creamy avocado, and sweet roasted red onions, perfect for summer picnics.

Ingredients

  • 2 ears of corn
  • 2 ripe avocados, diced
  • 1 medium red onion, sliced
  • 2 tablespoons lime juice
  • Fresh cilantro or scallions, for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or skillet over high heat.
  2. Char the corn for about 5-7 minutes, turning frequently until caramelized.
  3. Roast the sliced red onion until tender and slightly browned.
  4. Combine the charred corn, roasted red onions, and diced avocados in a bowl.
  5. Drizzle with lime juice and season with salt and pepper.
  6. Gently mix all ingredients together, being careful not to mash the avocado.
  7. Serve immediately, garnished with cilantro or scallions.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days, but add avocado just before serving to prevent browning.
