Ingredients

  • 4 medium Russet potatoes
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 4 large tortillas
  • Salt to taste
  • Ground black pepper to taste
  • Olive oil for searing

Instructions

  1. Boil the potatoes until fork-tender.
  2. Drain and mash the potatoes with cheese while still hot.
  3. Lay out the tortillas and fill each one with the mashed potato mixture.
  4. Roll them up tightly.
  5. Sear in a hot skillet until crispy and golden brown.
