A quick and delicious Chicken Zucchini Stir Fry with juicy chicken and fresh zucchini tossed in a savory sauce, perfect for busy weeknights.

Ingredients

  • 1 lb chicken breast, sliced
  • 2 medium zucchinis, sliced
  • 2 tablespoons soy sauce (or gluten-free tamari)
  • 2 tablespoons high smoke-point oil
  • Salt and pepper to taste
  • Optional vegetables (bell peppers, snap peas, baby corn)
  • Sesame seeds or chopped green onions for garnish

Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Add sliced chicken and sauté until golden and cooked through, about 5-7 minutes.
  3. Remove chicken from the pan and set aside.
  4. Toss in zucchini and any other desired veggies, cooking until tender yet still crisp.
  5. Return the chicken to the skillet, drizzle in the soy sauce, and stir to coat.
  6. Heat everything together until warmed through.

Notes

For a vegetarian version, replace chicken with firm tofu. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
