A vibrant and nourishing salad bursting with flavor, featuring chickpeas, creamy avocados, and tangy feta cheese.

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 2 ripe avocados, diced
  • 1 cup feta cheese, crumbled
  • 1 cucumber, chopped
  • 1 bell pepper, chopped
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the chickpeas.
  2. Chop the cucumber, bell pepper, and cherry tomatoes into bite-sized pieces.
  3. Cut the avocados just before assembly to keep them fresh.
  4. Crumble the feta cheese over the top.
  5. Drizzle olive oil and lemon juice for dressing.
  6. Gently fold everything together without mashing the avocados.
  7. Serve fresh and enjoy!

Notes

Best enjoyed fresh, but leftovers can be kept in an airtight container for up to 2 days. Add dressing just before serving to prevent sogginess.
