Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup parsley or cilantro, chopped
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Start by rinsing and draining the chickpeas.
  2. Chop the cherry tomatoes, cucumber, red onion, and herbs.
  3. Combine all ingredients in a large bowl.
