A vibrant and refreshing salad with wholesome ingredients like chickpeas, feta, and avocado, perfect for any meal.

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1 ripe avocado, diced
  • 1/2 cup feta cheese, diced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Fresh cilantro or parsley, for garnish
  • Salt and pepper, to taste

Instructions

  1. Rinse and drain the chickpeas.
  2. Chop the avocado and feta into bite-sized pieces.
  3. Combine all ingredients in a large bowl.
  4. Drizzle with olive oil and lemon juice.
  5. Gently toss to mix without mashing the avocado.
  6. Serve chilled or at room temperature.
