A refreshing Cilantro Lime Pasta Salad blending zesty lime, fresh cilantro, and perfectly cooked pasta, perfect for meal prep or gatherings.

Ingredients

  • 8 oz pasta (any shape)
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup diced vegetables (bell peppers, cucumbers, etc.)
  • 1/2 cup fresh cilantro, chopped

Instructions

  1. Cook the pasta according to package instructions until al dente.
  2. Drain and rinse under cold water to cool.
  3. Whisk together lime juice, olive oil, salt, and pepper in a bowl.
  4. Toss cooled pasta with dressing, cilantro, and diced veggies.
  5. Serve immediately or refrigerate for later enjoyment.

Notes
