A vibrant and refreshing classic pasta salad with colorful vegetables and a tangy dressing, perfect for gatherings and weeknight dinners.

Ingredients

  • 2 cups pasta of choice
  • 1 cup bell peppers, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumbers, diced
  • 1/4 cup fresh herbs (basil or parsley), chopped
  • 1/4 cup olive oil
  • 2 tablespoons vinegar (balsamic or red wine)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Boil the pasta according to package instructions until al dente.
  2. Drain and rinse the pasta under cold water to stop the cooking process.
  3. Chop your vegetables into bite-sized pieces while the pasta cools.
  4. Toss the pasta and chopped vegetables in a large bowl.
  5. Drizzle with olive oil, vinegar, salt, and pepper, then mix well.
  6. Serve chilled, optionally garnished with fresh herbs.

Notes

Store leftovers in an airtight container for up to 3 days. For freezer storage, omit dressing and add fresh when serving.
