Ingredients

  • 200g pasta
  • 250g fresh asparagus, chopped
  • 1 cup heavy cream (or dairy-free alternative)
  • 1 lemon, zest and juice
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Parmesan cheese, for serving (optional)

Instructions

  1. Cook the pasta according to the package instructions until al dente, reserving some pasta water.
  2. Heat oil in a skillet over medium heat. Add the chopped asparagus and sauté until tender, about 4–5 minutes.
  3. Stir in the cream and lemon zest, allowing it to gently simmer to thicken.
  4. Combine the cooked pasta with the sauce and asparagus, adjusting the consistency with reserved pasta water as needed.
  5. Serve topped with extra lemon zest, black pepper, and Parmesan cheese if desired.

Notes

Avoid overcrowding the pan when sautéing asparagus to ensure they get a nice sear. Adjust seasoning to enhance flavor.
