A delightful dish combining perfectly cooked pasta with a rich, creamy pesto sauce and tender chicken. Ideal for a quick weeknight dinner.

Ingredients

  • 2 chicken breasts
  • 8 ounces of pasta
  • 1 cup basil pesto
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh basil for garnish
  • Parmesan cheese for serving

Instructions

  1. Heat a skillet over medium heat and add oil.
  2. Season the chicken breasts with salt and pepper.
  3. Sear the chicken for 6-7 minutes on each side until golden brown and cooked through.
  4. Cook the pasta according to the package instructions until al dente.
  5. Reserve a bit of pasta water before draining.
  6. Add the cooked pasta to the skillet with the chicken.
  7. Mix in the basil pesto and heavy cream.
  8. Adjust the creaminess with reserved pasta water as needed.
  9. Garnish with fresh basil and parmesan before serving.

Notes

For a vegetarian version, substitute chicken with sautéed mushrooms or zucchini. For vegan, use plant-based cream and pasta.
