A rich and creamy potato salad, perfect for barbecues, picnics, and family dinners.

Ingredients

  • 2 pounds potatoes, diced
  • 1 cup mayonnaise
  • 2 tablespoons mustard
  • 1 onion, finely chopped
  • 2 stalks celery, chopped
  • Salt and pepper to taste
  • Fresh herbs (parsley or dill) for garnish

Instructions

  1. Boil the potatoes until fork-tender, about 10-15 minutes.
  2. Drain the potatoes and let them cool.
  3. Mix your creamy dressing ingredients until smooth and well combined.
  4. Fold the cooled potatoes into the dressing gently.
  5. Toss in the chopped veggies and mix until everything is coated.
  6. Chill the salad for at least an hour before serving.

Notes

For extra tang, substitute Greek yogurt for mayonnaise. Let the salad chill for better flavor.
