Ingredients

  • 2 large cucumbers, sliced
  • 2 cups ripe tomatoes, halved
  • 1 cup fresh mozzarella cheese, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Begin by slicing the cucumbers into rounds or half-moons.
  2. Next slice your mozzarella into bite-sized pieces and halve the tomatoes if using cherry or grape varieties.
