A crisp and refreshing cucumber chickpea salad, perfect for lunch or as a side at gatherings.

Ingredients

  • 2 Cucumbers, diced
  • 1 can Chickpeas, drained and rinsed
  • 2 tablespoons Olive Oil
  • 2 tablespoons Lemon Juice
  • Fresh herbs (Parsley or Cilantro), to taste
  • Salt and pepper, to taste

Instructions

  1. Wash and dice the cucumbers, and drain and rinse the chickpeas.
  2. Combine both ingredients in a large bowl.
  3. Whisk together the olive oil, lemon juice, and your choice of herbs or spices for the dressing.
  4. Drizzle the dressing over the salad and toss everything until evenly coated.
  5. Chill the salad before serving for enhanced freshness.
