Ingredients

  • 1 pie crust
  • 1 cup granulated sugar
  • 4 large eggs (separated)
  • 1/2 cup fresh lemon juice
  • 1/4 cup butter
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon cream of tartar

Instructions

  1. Prepare the pie crust: mix the flour and sugar, then cut in the cold butter until crumbly. Press into the pie dish and bake until golden.
  2. Whisk together the granulated sugar, egg yolks, and lemon juice over medium heat until thickened.
  3. Pour the lemon filling into the prepared crust and let cool.
  4. Beat the egg whites with cream of tartar until glossy and stiff peaks form.
  5. Spread the meringue over the lemon filling and bake until lightly toasted.
