A delightful jelly made from fresh dandelion flowers that captures the essence of spring with its sweet and slightly earthy flavor.

Ingredients

  • 2 cups dandelion flowers, washed
  • 4 cups water
  • 1 package pectin
  • 2 cups sugar
  • Optional: honey or sugar substitute

Instructions

  1. Wash the dandelion flowers thoroughly to remove any dirt or pests.
  2. Steep the flowers in boiling water for about 15 minutes to extract their flavors.
  3. Strain the mixture to remove any solids.
  4. Combine the infused water with sugar and pectin over moderate heat.
  5. Stir constantly until it reaches a rolling boil.
  6. Pour the jelly into jars, seal, and allow it to cool.

Notes

Store dandelion jelly in a cool, dark place. Once opened, refrigerate and use within 3-4 weeks. It can be frozen in well-sealed containers.
