Ingredients

  • 1 standing rib roast
  • Salt and pepper, to taste
  • Fresh rosemary, chopped
  • Fresh thyme, chopped
  • Olive oil, for rubbing

Instructions

  1. Preheat your oven to a high temperature.
  2. Rub the roast generously with olive oil, salt, pepper, rosemary, and thyme.
  3. Place the roast bone-side down on a roasting rack.
  4. Roast until the desired internal temperature is reached, approximately 135°F for medium-rare.
  5. Let the roast rest before slicing to allow juices to redistribute.

Notes
