A delightful, fresh take on the classic appetizer featuring ripe tomatoes, creamy feta, and aromatic herbs.

Ingredients

  • 1 French baguette, sliced
  • 2 cups ripe tomatoes, diced
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Optional: crushed red pepper flakes for heat

Instructions

  1. Toast the slices of bread on a grill or in the oven until golden brown.
  2. Allow the bread to cool slightly.
  3. Combine diced tomatoes, crumbled feta, and chopped herbs in a bowl.
  4. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper.
  5. Spoon the mixture generously onto the toasted bread just before serving.
