A delightful grazing board featuring succulent chicken souvlaki, flavorful feta dip, and vibrant veggies, perfect for sharing at any gathering.

Ingredients

  • 1.5 lbs chicken breast, cubed
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper to taste
  • 8 oz feta cheese
  • 1/2 cup plain yogurt
  • 1 tbsp lemon juice (for dip)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 bell pepper, chopped
  • Pita bread (for serving)

Instructions

  1. Marinate the chicken in olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper for at least 30 minutes.
  2. Preheat your grill to medium-high heat.
  3. Thread the marinated chicken onto skewers.
  4. Grill the chicken skewers for about 10-15 minutes or until cooked through, turning occasionally.
  5. While the chicken is grilling, blend the feta cheese, yogurt, lemon juice, and garlic until smooth to make the dip.
  6. Arrange the grilled chicken, feta dip, and fresh veggies on a large board for serving.

Notes

Let the marinated chicken rest at room temperature for about 30 minutes before grilling for even cooking. Avoid overcrowding the grill.
