A vibrant and refreshing pasta salad featuring colorful vegetables, feta cheese, and a zesty dressing, perfect for warm weather gatherings.

Ingredients

  • 8 ounces pasta (fusilli or penne)
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions

  1. Boil the pasta in a pot of boiling water until al dente, then drain and cool.
  2. Chop the cucumbers, bell peppers, and cherry tomatoes into bite-sized pieces.
  3. Whisk together the olive oil, lemon juice, oregano, and pepper to make the dressing.
  4. Combine the cooled pasta, chopped vegetables, and feta cheese in a large bowl.
  5. Toss everything with the dressing to ensure even coverage.
  6. Let it sit for a few minutes for the flavors to meld before serving.
