These Grilled Maple Sriracha Chicken Bites combine sweet and spicy flavors with tender chicken, served with coconut rice and vibrant mango avocado salsa. Perfect for weeknight dinners or gatherings.

Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1/4 cup maple syrup
  • 2 tablespoons Sriracha
  • 1 cup coconut milk
  • 2 cups cooked rice
  • 1 ripe mango, diced
  • 1 avocado, diced
  • 1/4 cup yogurt (optional, for chili mayo)
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken in a mixture of maple syrup and Sriracha for at least 30 minutes.
  2. Grill the chicken bites on medium heat until cooked through and juicy, about 10-12 minutes.
  3. Prepare coconut rice by simmering cooked rice in coconut milk until creamy.
  4. Chop fresh mango and avocado for the salsa.
  5. Serve the chicken atop coconut rice with mango avocado salsa and a drizzle of chili mayo.

Notes

For a dairy-free option, replace yogurt with plant-based yogurt. Allow the chicken to rest before serving for juicier bites.
