Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup salsa verde
  • 1 cup pepper jack cheese, shredded
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Sliced avocados, for garnish

Instructions

  1. Marinate the chicken breasts in salsa verde, olive oil, garlic powder, onion powder, salt, and pepper for at least 30 minutes.
  2. Preheat the grill to medium heat.
  3. Grill the marinated chicken for 6-7 minutes on each side until cooked through and grill marks form.
  4. Sprinkle pepper jack cheese over the chicken and close the grill lid for 2-3 minutes until the cheese melts.
  5. Serve with fresh cilantro and sliced avocados over rice or quinoa, if desired.
