Ingredients

  • 4 chicken thighs
  • 3 tablespoons fish sauce (or coconut aminos for gluten-free option)
  • 2 cloves garlic, minced
  • 1 stalk lemongrass, finely chopped
  • 1 teaspoon black pepper
  • 2 tablespoons brown sugar
  • 1 tablespoon vegetable oil
  • Fresh herbs (for serving)
  • Jasmine rice or rice noodles (for serving)
  • Pickled vegetables (for serving)
  • Chopped peanuts or fresh cilantro (for garnish)

Instructions

  1. Prepare a marinade by mixing fish sauce, garlic, lemongrass, pepper, brown sugar, and vegetable oil in a bowl.
  2. Marinate the chicken thighs in the mixture for at least a few hours or overnight.
  3. Preheat your grill to medium-high heat.
  4. Place the marinated chicken on the grill and cook for 6-8 minutes on each side until fully cooked and charred.
