Ingredients

  • 1 cup shredded zucchini
  • 1 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your muffin tin with liners or spray.
  2. Grate the zucchini and squeeze out excess moisture.
  3. Mix the dry ingredients, including flour, cocoa powder, baking soda, baking powder, and salt in one bowl.
  4. Combine the wet ingredients in another bowl, ensuring the zucchini is well incorporated.
  5. Fold the wet mixture into the dry ingredients until just combined.
  6. Spoon the batter into the prepared muffin cups.
  7. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
