A refreshing and nutritious salad featuring succulent shrimp, creamy avocado, and colorful vegetables, perfect for a light meal.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 bell pepper, chopped
  • 1/2 onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium heat and add olive oil.
  2. Add shrimp and season lightly with salt and pepper.
  3. Cook until shrimp are pink and opaque, about 3-5 minutes.
  4. Remove from heat and let cool.
  5. Chop the bell pepper, onion, and cilantro.
  6. Combine shrimp, vegetables, and diced avocado in a bowl.
  7. Drizzle with lime juice and mix gently.
  8. Serve immediately, garnished with extra lime wedges and herbs.

Notes

Store leftovers in an airtight container for up to 24 hours. Use additional lime juice to prevent browning of avocado.
