A moist and fluffy zucchini bread that’s perfect for breakfast or a snack.

Ingredients

  • 2 cups grated zucchini
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 3 large eggs
  • ½ cup vegetable oil
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon (optional)
  • 1 cup walnuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Grate the zucchini and squeeze out excess moisture.
  3. Mix the dry ingredients (flour, sugar, baking soda, salt, cinnamon) in one bowl.
  4. Whisk the eggs and oil in another bowl.
  5. Combine the wet mixture into the dry ingredients, mixing until just combined.
  6. Pour the batter into the greased loaf pan.
  7. Bake for 50-60 minutes, or until a toothpick comes out clean.
  8. Cool in the pan for a few minutes, then transfer to a wire rack.

Notes

Store in an airtight container for up to three days or freeze for longer storage.
