A vibrant salad filled with sweet corn, tender pasta, and a creamy dressing, perfect for summer barbecues and picnics.

Ingredients

  • 2 cups rotini or fusilli pasta
  • 2 ears of fresh corn
  • 1/4 cup fresh herbs (such as cilantro or basil), chopped
  • 1/2 cup creamy dressing (dairy-free option available)
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until firm to the bite.
  2. Heat a grill pan over medium-high heat and roast the corn until charred.
  3. Slice off the kernels from the cooled corn.
  4. Combine the cooked pasta, corn, chopped herbs, and dressing in a large mixing bowl.
  5. Toss everything until well coated, and adjust seasoning as needed.
  6. Serve it warm or chill for an hour before serving.

Notes
