A vibrant pasta salad with colorful layers of fresh ingredients, perfect for picnics and potlucks.

Ingredients

  • 8 ounces pasta of your choice
  • 1 cup bell peppers, chopped
  • 1 cup cucumbers, chopped
  • 1/2 cup olives, sliced
  • 1/4 cup red onion, diced
  • 1/4 cup olive oil
  • 2 tablespoons vinegar (red wine or apple cider)
  • 1 teaspoon dried herbs (oregano, basil)
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente.
  2. Drain the pasta and let it cool slightly.
  3. Chop the vegetables into bite-sized pieces.
  4. Combine the pasta and veggies in a large bowl.
  5. Pour the dressing over the pasta and veggies.
  6. Toss everything until well-coated.
  7. Chill in the refrigerator for at least 30 minutes.

Notes

This salad tastes better after chilling as the flavors meld together. Adjust dressing according to your taste preference.
