Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup fresh blueberries (or frozen, tossed in flour)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your baking pan.
  2. Cream the butter and sugar together until fluffy.
  3. Add the eggs one at a time, mixing in each before adding the next.
  4. Mix in the lemon juice and zest.
  5. Fold in the dry ingredients and blueberries, being careful not to overmix.
