Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 cup milk (or plant-based milk)
  • ½ cup unsalted butter (or dairy-free substitute)
  • 3 large eggs
  • 1 tablespoon lemon zest
  • ½ cup fresh lemon juice
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, sliced
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. Combine the dry ingredients (flour, sugar, baking powder) in one bowl.
  3. Whisk the wet ingredients (milk, butter, eggs, lemon juice, vanilla) in another bowl.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes.
  6. Check for doneness using a toothpick; it should come out clean.
  7. Cool the cake before topping it with fresh strawberries.
  8. Dust with powdered sugar if desired.
