Delightful Lemon Crumb Bars featuring a zesty lemon filling and a buttery crumb topping, perfect for any occasion.

Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup unsalted butter, melted (or coconut oil for dairy-free)
  • 2 large eggs
  • ½ cup fresh lemon juice
  • Zest of 2 lemons
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the flour, sugar, and salt in a bowl.
  3. Pour in the melted butter and mix until crumbly.
  4. Press half of the crumb mixture into a greased baking dish to form the base.
  5. Combine the lemon juice, zest, sugar, and eggs in a separate bowl.
  6. Pour the lemon filling over the crust.
  7. Sprinkle the remaining crumb mixture on top.
  8. Bake for 25-30 minutes or until golden brown.
  9. Let cool before slicing into bars.
