Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 cup fresh lemon juice
  • 1/2 cup granulated sugar (for curd)
  • 2 large eggs (for curd)
  • 1 tablespoon lemon zest
  • Powdered sugar (for garnish)
  • Whipped cream (optional, for garnish)

Instructions

  1. Prepare the tartlet dough by mixing butter and sugar until fluffy.
  2. Incorporate the flour until just combined and chill for 30 minutes.
  3. Roll out the dough and press into tartlet pans.
  4. Blind bake the shells until golden brown.
  5. Cool the shells and prepare the lemon curd on low heat.
  6. Combine eggs, sugar, and lemon juice in a saucepan and stir until thickened.
  7. Pour the curd into the cooled tart shells and refrigerate to set.
  8. Serve chilled, garnished with powdered sugar or whipped cream.

For a gluten-free option, substitute with gluten-free flour. Use plant-based butter for a dairy-free version.
