A creamy and zesty Lemon Ricotta Pasta with Spinach, perfect for weeknight dinners and special occasions.

Ingredients

  • 8 oz pasta
  • 1 cup ricotta cheese
  • 1 lemon, juice and zest
  • 2 cups fresh spinach
  • Salt, to taste
  • Freshly cracked black pepper, for garnish

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente.
  2. Whisk together the ricotta, lemon juice, and lemon zest in a bowl until smooth.
  3. Reserve a bit of pasta water before draining the cooked pasta.
  4. Combine the hot pasta with the ricotta mixture, adding reserved pasta water to create a silky sauce.
  5. Stir in the fresh spinach until just wilted.
  6. Serve in bowls garnished with black pepper and additional lemon zest.

Notes

For a gluten-free option, use your favorite gluten-free pasta. To enhance flavor, consider adding cherry tomatoes or grilled chicken.
