A delightful combination of crispy potatoes, seasoned ground meat, and fresh toppings. Perfect for a quick weeknight dinner.

Ingredients

  • 4 medium potatoes, cubed
  • 1 lb ground beef or turkey
  • 1 tbsp taco seasoning
  • 2 tbsp olive oil
  • 1 cup lettuce, shredded
  • 1 cup tomatoes, diced
  • 1 cup cheese, shredded
  • Optional toppings: guacamole, salsa, sour cream, fresh cilantro, lime juice

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and cube the potatoes, then toss them with olive oil and seasonings.
  3. Spread the potatoes on a baking sheet in a single layer.
  4. Roast the potatoes in the oven for 25-30 minutes until crispy.
  5. While the potatoes roast, cook the ground meat in a skillet over medium heat until browned.
  6. Add the taco seasoning to the meat as it cooks.
  7. Combine the roasted potatoes and seasoned meat in bowls.
  8. Top with your favorite garnishes.

Notes

For perfectly crispy potatoes, avoid overcrowding them on the baking sheet. Reheat leftover potatoes in the oven to maintain their texture.
