A delightful mango curd tart with a silky smooth texture and vibrant flavor, perfect for summer gatherings.

Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, chilled and diced
  • ¼ cup sugar
  • 1 egg yolk
  • 2 ripe mangoes, pureed
  • 3 large eggs
  • ½ cup sugar (for curd)
  • 1 tablespoon lemon juice
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the flour, butter, and sugar in a bowl, then mix until crumbly.
  3. Add the egg yolk and mix until dough forms.
  4. Press the dough into a tart pan and prick with a fork.
  5. Bake for 15-20 minutes until golden brown.
  6. Meanwhile, blend the mangoes, eggs, sugar, lemon juice, and salt in a saucepan.
  7. Cook over medium heat, stirring continuously until thickened.
  8. Strain the mixture to ensure a smooth curd.
  9. Pour the curd into the cooled tart crust.
  10. Chill for at least 2 hours before serving.
