A refreshing mango slaw combining vibrant mango with crisp vegetables, perfect as a side dish for summer barbecues or weeknight dinners.

Ingredients

  • 2 ripe mangoes, diced
  • 4 cups shredded cabbage (red or green)
  • 1 cup shredded carrots
  • 1/4 cup lime juice
  • 2 tablespoons honey (or agave syrup for a vegan option)
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Sesame seeds, for garnish

Instructions

  1. Chop the mango, cabbage, and carrots into uniform pieces.
  2. Whisk together lime juice, honey, salt, and pepper in a separate bowl.
  3. Combine the chopped mango and vegetables in a large bowl.
  4. Toss the dressing with the slaw until well coated.
  5. Chill for at least 15 minutes to allow flavors to meld.
  6. Serve garnished with fresh cilantro and sesame seeds.
