This Mediterranean Chicken Pasta Salad combines vibrant flavors and delightful textures, perfect for any occasion.

Ingredients

  • 8 oz pasta (your choice)
  • 2 cups cooked chicken, diced
  • 1 bell pepper, diced
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Bring a pot of water to a boil and cook the pasta according to package instructions.
  2. Season and cook the chicken until it’s golden brown and cooked through.
  3. Drain the pasta and rinse under cold water.
  4. Mix the pasta, chicken, chopped vegetables, and dressing in a large bowl until everything is evenly coated.
  5. Serve chilled or at room temperature.
