Juicy marinated chicken skewers grilled to perfection, paired with vibrant vegetables and fresh dips.

Ingredients

  • 1 pound chicken breast, cubed
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons dried oregano
  • 2 teaspoons garlic powder
  • Salt and pepper to taste
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1 zucchini, sliced
  • Fresh parsley for garnish

Instructions

  1. Marinate the chicken chunks in olive oil, lemon juice, oregano, garlic powder, salt, and pepper for at least 1 hour.
  2. Skewer marinated chicken alternating with chopped vegetables.
  3. Grill skewers over medium-high heat, turning occasionally, for about 10-15 minutes until golden brown.
  4. Serve on a mezze platter with hummus and tzatziki.
  5. Garnish with fresh parsley.

Notes

For the best flavor, marinate the chicken overnight. Soaking wooden skewers in water for 30 minutes prevents burning.
