A vibrant Mediterranean potato salad with tender potatoes, colorful vegetables, and a tangy dressing that celebrates fresh flavors.

Ingredients

  • 2 lbs waxy potatoes
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water until tender, about 15-20 minutes.
  2. Cool the potatoes, then dice them into bite-sized pieces.
  3. In a bowl, mix the diced cucumber, cherry tomatoes, parsley, and dill.
  4. Whisk together olive oil, lemon juice, salt, and pepper for the dressing.
  5. Combine the potatoes and veggie mixture in a large bowl.
  6. Pour the dressing over the salad and gently mix to coat all ingredients.

Notes
