A vibrant and refreshing Mediterranean Potato Salad combining hearty potatoes, fresh herbs, and tangy dressing. Perfect for potlucks, picnics, or as a side dish.

Ingredients

  • 2 pounds waxy potatoes
  • 1 cup bell peppers, chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 1/3 cup extra virgin olive oil
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Wash and cut the potatoes into even chunks.
  2. Boil the potatoes until fork-tender, about 10–15 minutes.
  3. Drain the potatoes and allow them to cool.
  4. Whisk together olive oil, lemon juice, garlic, and spices in a separate bowl for the dressing.
  5. Toss the cooled potatoes with the dressing gently.
  6. Fold in the chopped vegetables and herbs.

Notes

Allow potatoes to cool completely before mixing to avoid mushiness. Adjust seasoning to taste.
