A vibrant and refreshing salad bursting with colorful veggies and zesty lime dressing, perfect for a light lunch or dinner.

Ingredients

  • 1 head romaine lettuce, chopped
  • 1 bell pepper, diced
  • 1 cucumber, sliced
  • 1 red onion, diced
  • 1 can black beans, rinsed
  • 1 can corn, rinsed
  • 1/4 cup lime juice
  • 2 tbsp olive oil
  • 1 tsp cumin
  • Salt and pepper to taste
  • Cilantro, for garnish
  • Queso fresco or avocado slices, for serving

Instructions

  1. Begin by preparing your vegetables: chop the lettuce, dice the peppers, and slice the cucumbers and red onion.
  2. Rinse the black beans and corn if you’re using canned products.
  3. Mix together lime juice, olive oil, cumin, and your favorite spices to create the dressing.
  4. Combine all veggies in a large bowl, drizzle the dressing over them, and toss until evenly coated.
