A vibrant and refreshing pasta salad combining tender pasta, sweet corn, and a creamy dressing, perfect for summer gatherings.

Ingredients

  • 8 oz pasta
  • 1 cup sweet corn
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tbsp lime juice
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup diced peppers
  • Cilantro for garnish
  • Cotija cheese for garnish

Instructions

  1. Cook your pasta according to package instructions until al dente.
  2. Drain and cool it under cold water.
  3. Whisk together sour cream, mayonnaise, lime juice, cumin, and chili powder for the dressing.
  4. Combine the cooled pasta, sweet corn, and diced peppers in a large bowl.
