A vibrant and refreshing pasta salad featuring sweet corn, zesty lime, and smoky chili flavors, perfect for picnics and gatherings.

Ingredients

  • 2 cups pasta
  • 1 cup fresh corn (grilled or roasted)
  • 1 cup diced bell peppers
  • 1 ripe avocado, diced
  • 1/4 cup fresh herbs (cilantro or parsley)
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package directions until al dente. Drain and rinse under cold water.
  2. Roast or grill the corn until charred, then let it cool and cut the kernels off the cob.
  3. Combine the pasta, corn, diced bell peppers, and avocado in a large bowl.
  4. Drizzle with lime juice and olive oil, then season with salt and pepper.
  5. Toss everything gently to combine, ensuring each bite is flavorful.
