Delightful mini lemon loaves with icing, perfect for any occasion.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon fresh lemon zest
  • 1/4 cup fresh lemon juice
  • 1 cup powdered sugar (for icing)
  • 2 tablespoons fresh lemon juice (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your mini loaf pans.
  2. Combine the dry ingredients in one bowl.
  3. Whisk the wet ingredients in another bowl.
  4. Gradually mix the wet ingredients into the dry until just combined.
  5. Pour the batter evenly into your prepared pans.
  6. Bake until golden and a toothpick inserted comes out clean, about 25-30 minutes.
  7. Allow them to cool before drizzling with lemon icing.

Notes

Best enjoyed warm or at room temperature. Consider adding poppy seeds or blueberries for added flavor.
