This moist rhubarb cake combines sweet and tart flavors for a delightful springtime dessert, finished with a rich butter sauce.

Ingredients

  • 2 cups fresh rhubarb, chopped
  • 1 ½ cups sugar
  • 2 cups all-purpose flour
  • 3 large eggs
  • ½ cup butter (or plant-based alternative)
  • ½ cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare your baking pan.
  2. Combine the flour, sugar, and eggs until smooth.
  3. Fold in the chopped rhubarb.
  4. Pour the batter into the prepared pan.
  5. Bake for 40-50 minutes or until a toothpick inserted into the center comes out clean.
  6. Prepare the butter sauce by melting butter and whisking sugar and cream until velvety.
