A delightful and fluffy cake perfect for celebrating Mother’s Day with loved ones.

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup unsalted butter, at room temperature
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 8 oz cream cheese
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your cake pans with parchment paper.
  2. Mix the dry ingredients in a bowl: flour, baking powder, baking soda, and salt.
  3. Cream the butter and sugar together until fluffy.
  4. Add the eggs and vanilla, and mix until well combined.
  5. Incorporate the dry ingredients until just combined.
  6. Pour the batter into prepared pans and bake for 25-30 minutes until golden brown.
  7. Allow the cakes to cool completely before frosting them with cream cheese frosting.

Notes

Store leftovers in an airtight container in the fridge for up to three days. For longer storage, wrap individual slices and freeze for up to a month.
