A moist and tender zucchini bread with a hint of spice, perfect for breakfast or snacks.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 2 cups grated zucchini

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, combine the dry ingredients: flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk together the eggs, oil, and sugar until smooth.
  4. Gradually incorporate the dry mixture into the wet ingredients.
  5. Gently fold in the grated zucchini until just combined.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake until golden and a toothpick inserted into the center comes out clean, about 60 minutes.

Notes
