A vibrant and refreshing salad that combines tender orzo pasta with fresh vegetables and aromatic herbs, perfect for warm weather gatherings.

Ingredients

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • ¼ cup fresh parsley, chopped
  • ¼ cup olive oil
  • 2 tablespoons vinegar
  • Salt and pepper to taste

Instructions

  1. Boil the orzo in salted water until al dente, then drain and rinse with cold water.
  2. Chop the vegetables and herbs while the orzo cooks.
  3. Combine the cooked orzo, vegetables, and herbs in a large bowl.
